Both maps were drawn by J.R.R. Tolkien’s third son Christopher Tolkien in the 1960s for a hardbound edition of the books. The full Middle Earth map folds out from Fellowship of the Ring and The Two Towers books. Return of the King had the Gondor/Mordor foldout map.
According to Wiki, these were the original Middle Earth maps for Lord of the Rings. (entry on Christopher Tolkien)The first printing of the books in the mid-1950s had no maps.
